Turkish Courgette and Cheese Tray Bake, Firin Kabak Mucveri

I first had this Turkish Courgette and Cheese Tray bake from a neighbour and since then I rarely make Mucveri, courgette fried patties anymore as this version is simpler to make and of course healthier.


Mucveri or Courgette patties are a popular treat in Turkey, made with lots of fresh herbs and fried to make a tasty snack or light meal. This oven baked Turkish Courgette and Cheese Tray bake version of Mucveri is a easier and healthier version to the classic patties.

Ingredients for Turkish Courgette and Cheese Tray bake

3 to 4 big firm courgettes, grated with skins on
1 large Onion, finely chopped
3 to 4 Garlic Cloves, crushed
2 tablespoon of olive oil
3 eggs
3 tablespoons of flour
8oz White Cheese, feta or beyaz peynir
large bunch of dill, parsley and mint, roughly chopped
1 teaspoon hot red pepper
salt and pepper to taste
Nigella Seeds

Set oven to 150c

Instructions for Turkish Courgette and Cheese Tray bake

Take your grated courgettes and sprinkle with salt and leave them to stand for 5 to 10 minutes to allow the bitter juices to come out of the courgettes.

Then squeeze off the excess water, you don’t want them to be to wet.

Take a large bowl and add in your flour and eggs and make a smooth batter, then add in your chopped onion, crushed garlic, herbs, olive oil, red pepper and then crumble in your white cheese. Now add in your courgettes and then season to taste.

Mix all your ingredients together to form a thick batter. Take a large baking tray about 2 inch deep oil your tray and then pour your courgette mixture into the tray.

Sprinkle Nigella Seeds over the top and place in the over and cook for 30 min or till golden on top.
