This 3 colour Salad would look good on any table. Its similar to the Mosaic Salad but using more potato.
Ingredients for 3 Colour Salad
- Poatoes – 1 Kilo
- Beetroots (pickled) – 600g
- Carrots – 7 – 8
- Onions – 2
- Parsley – 1 bunch
- Olive Oil –
- Salt and Pepper –
- Pul Biber (Paprika) –
Boil and mash your potatoes and then split into 3 even sections.
Finely chop one onion and saute in the olive oil till soft, then add in one section of your mashed potatoes and in some salt and pepper and paprika to taste. Saute for another 2 minutes and remove.
Chop your parsley and mix this through your onion and potato mixture.
Grate your carrots. Finely chop the second onion and saute till soft add in your carrots continue cooking till soft and then add in the second section of your potatoes with salt and pepper and paprika to taste for another 2 minutes then remove from heat.
Grate your beetroot and mix with the final section of mashed potatoes.
Line your mould with cling film and layer the first section of potatoes and parsley mix on the bottom.
Then take your carrot and potato mix and layer this on top of the first layer.
Then finally take your beetroot and mashed potato mix and layer this on top of the first two.
Cover and leave in the fridge for 1 to 2 hours. Turn out on a serving dish before serving.
