Tepsi Borek or Tray Borek is made will Yufka which is a pastry similar to Filo Pastry and various fillings. Here is a classic recipe for Tepsi Böreği.

Ingredients:
- Yufka Pastry Sheets or Filo Pastry – 5
- Milk – 2 Water Glasses
- Eggs – 2
- Vegetable Oil – 1/2 Water Glass
- Fresh Parsley – Bunch
- Feta Cheese or White Turkish Cheese – 250g
- Red Pepper Flakes or Paprika – To Taste
- Salt and Pepper – To Taste
Instructions:
Preheat your oven to 170 degrees
Mix the Milk, Eggs and Oil together. Then in a separate bowl mix together your chopped Parsley, Cheese, Red Pepper Flakes, Salt and Pepper.
Oil your tray and then lay one full sheet of Yufka making sure the edges overlap your tray.
Then take 2 sheets of the Yufka and cut into 4 strips and place these strips into your Milk and Egg mix. Take these strips and lay them on the bottom of the tray on top of the first Yufka sheet.
Then take your cheese Mix and spread this on top of the Yufka.
Take the last 2 Yufka Sheets and cut again into 4 strips and place in the Milk and Egg mix.
Then lay these strips on top of the cheese mix making sure to cover all the cheese mix. Then take the edges of the First Yufka sheet and fold these over the the top of the other layers and spread the remaining Milk and Egg mix on top.
Place in the over and cook for 25 to 30 minutes until golden on top.
I always use for a water glass a guide of about a normal cup about 250ml.
