These biscuits are a favourtie in my house, they are easy to make and taste great.

Ginger Biscuits Ingredients

1 ½ tsp baking powder

½ tsp salt

1 tablespoon ginger

1 tsp all spice

1 tsp Black Pepper

¾ Olive Oil

½ Cup Brown Sugar

½ Cup White Sugar

6 tablespoons of Molasses (Uzum Pekmez)

1 egg

Oven Temp: 200 c, gas mark 6, 400 F

Ginger Biscuits Recipe

Sive your flour, baking powder and salt together and add in the spices. You can add more spice if you wish, I often add more black pepper to give more heat to the biscuit.

Mix your sugar and oil together, then add in your egg and mix through and then add in your molasses. I use Uzum Pekmez but if you want a deeper flavour try using Carob Pekmez which has a closer flavour to molasses.

Mix together the flour and sugar mix until you get a firm texture. If it is to soft add in a little more flour at a time till you get the right texture. If however it is to dry add in a little more oil.

Flatten out your mixture and warp in cling film and leave in the freezer for 20 minutes.

Heat your oven.

In the meantime, line or grease a baking tray. When your dough is ready, take out the freezer and divide into balls around 1 inches, about the size of a ping-pong ball. Then flatten these balls in the palm of your hand.

Place on your baking tray and bake for 10 to 15 min or until golden.

Remove from oven, when they come out of the oven they will feel soft, leave them to cool on a cooling rack and they will harden up like ginger snaps.
