Turkish Pide is probably one of the best known dishes of Turkey. If you have traveled to Turkey you more than likely will have tried Turkish Pide at least once. Turkish Pide is often called Turkish Pizza with its various fillings and dough base.
Turkish pide has a variety of fillings from cheese, mince meat, to a mix of meat and cheese and some even come with an egg on top. However you like your Turkish Pide this recipe will help you make your own at home and use whatever filling you like.
Dough Ingredients for Turkish Pide
- 1 tsp salt
Set oven for 200 c
Dough Recipe for Turkish Pide
To make the dough, sift your flour add in your salt and sugar then make a well in the center and add in your olive oil, warm water and yeast. Combine all the ingredients well. The dough is meant to be slightly wet.
Cover the dough with a clean towel and leave to rest in a warm area to rise. Leave to stand for about 1 hour. In the meantime you can prepare you filling see below for my mince meat filling.
Once the dough has risen to almost double its size, take it out of the bowl onto a floured surface and divide into equal sizes, I made 4 divides but you can make up to 10.
If you find you have to much dough it keeps well in the fridge for a few days and can be used later for more pide.
Line a baking tray.
Once you have divided your dough, roll out your dough to make an oval shape and place on a lined baking tray.
Fill your pide with your desired filling and then fold in the sides, pinching the sides together.
Then bake in the over at 200 c for about 10-15 mins or until light brown.
If your doing a meat filling you may like to sprinkle a light layer of grated cheese over the top and let it melt into the hot filling once you have taken it from the oven.
Cut into strips and serve with Salad and a nice refreshing glass of Ayran.
My Mince filling for Turkish Pide
- 250g minced beef or lamb
- 2 or 3 Green peppers or red
- 1 large tomato
- Salt and pepper to taste
- 1 tsp ground corriander
- 1 tsp ground sweet red pepper or paprika
Recipe for my Turkish Pide filling
Finely chop your onion, peppers and tomato (remove skin from tomato). In a little oil soften your onion and add in your peppers cook for a few minutes until soft, then add in your minced meat. Brown off the mince, then add in the spices and season to your taste.
Add in your chopped tomato and then cook for a further 10 minutes.
Now your filling is ready to go into your pide. Grate your cheese while the pide is cooking in the oven (see above recipe) and then sprinkle over some of the grated cheese when you take the pide out of the oven.
Cut pide into strips and serve. I also find the pide is good cold and save some for the next day for lunch.
